How should we take a partial deposit for a custom order request?
For example:
on Feb 16, clerk accepted $50 deposit (non taxed) on a custom order for a clock that will sell for $250 when completed.
When clock is completed we need to charge the customer $200 plus tax (on $250).

You should be able to do this with the Open Order mechanism. On the payment screen (traditional) or the the Advanced Options on the Touch, you can convert the sale to an Open Order and take a partial payment.
